Carrot with Jalapeno, Lime and Cilantro Salad

Serves 4 (84 calories a serving)

1 bag of match stick carrots
2 T olive oil
3 T Fresh lime juice
1 Medium Jalapeno
Kosher salt and freshly ground pepper( to taste)
1/2 c coarsely chopped fresh cilantro

Use large bowl for carrots and cilantro and set aside. In a small bowl whisk the oil and lime juice. Add the jalapeno and season to taste with salt and pepper. Pour mixture of carrots and cilantro.

Serve


I can eat the entire bowl, I love the lime and cilantro taste.
