I found this recipe for broccoli salad with sweet vinaigrette a couple of years ago in my Biggest Loser Cookbook. I am not usually a big fan of this type of salad, but this one is a keeper!
Serves 4
Ingredients
3/4 cup of orange juice
1/2 cup fat-free plain yogurt
3 tbsp stone ground mustard
4 tsp 100% fruit orange marmalade preserves
6 cups broccoli florets, coarsely chopped
1/2 cup chopped red onion
Make it
In a plastic storage container, whisk together the juice, yogurt, mustard and preserves.
Add the broccoli and onion. Toss to coat.
Cover the container with the lid. Refrigerate for at least 1 hour or up to 1 day before serving
