Parmesan-Pepper Sweet Potato Fries Recipe
This Sweet Potato Fries recipe without a doubt will cure your craving for French fries without sabotaging your weight loss efforts. Added bonus, sweet potatoes are an excellent source of vitamin A and vitamin C. Blah, blah, blah...what does that mean to me? That means that sweet potatoes are a powerful source of antioxidants. Antioxidants work to eliminate free radicals which are responsible for heart disease and various cancers. I found this yummy recipe in The Biggest Loser Cookbook a couple years ago and it has been on my weekly menu ever since. Another Griffin favorite (my 2 year old)...Enjoy!
Serves 4
Ingredients
- 2 pounds of sweet potatoes, cut into 1/4 inch thick sticks...I use 3-4 medium potatoes
- 4 tablespoons grated reduced fat Parmesan cheese
- 2 teaspoons extra-virgin olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Pinch of cayenne
- Optional: salt and pepper to taste
- Optional: Ketchup
Make it
- Preheat oven to 450 degrees F
- In medium bowl, toss potatoes, cheese, olive oil, garlic powder, paprika, cayenne, salt and pepper
- Arrange potatoes in a single layer on a medium nonstick baking sheet
- Bake for 8 minutes. Flip and bake for additional 10-12 minutes (or until potatoes are tender and browned in spots
- Serve immediately
