This awesome Zucchini Strips recipe was submitted by Sarah in North Carolina. They definitely deserve a spot on your weekly menu. My 2 year old loved them...BONUS!
Serves 4
Ingredients
1/3 c. seasoned bread crumbs
1/4 c. nonfat Parmesan cheese topping
4 small zucchini, quartered lengthwise
1/4 c. egg substitute
Make it
Combine bread crumbs and cheese.
Dip zucchini in egg, then dredge through crumb mixture.
Place on greased cookie sheet and bake for 20-25 mins at 450 degrees until golden brown.
